These high protein baked apple fritters come together with a few shortcuts and no complicated prep.

Warm cinnamon-spiced apple fritters with a crunchy streusel topping and a vanilla protein drizzle that you won’t even be able to tell is healthier for you. No peeling and cooking down apples or deep frying.

I made these after seeing another creator call his recipe the “easiest” high protein apple fritters.
Then he started making them from scratch.

Apparently, we have different definitions of easy.

Why these high protein baked apple fritters are so easy

This version starts with sugar-free apple pie filling, nonfat Greek yogurt, and Carbquik baking mix.

That baking mix is an absolute game-changer for low-calorie goodies like this.
And that’s coming from “Carbs #1 Fan” (I get a card in the mail every year from my birthday from “big carb”).

Mix the batter, scoop it onto a pan, add the topping, and bake. The frosting comes together while the oven does its thing.

Now THAT’S “easy.”

The full batch makes four fritters and packs approximately 31g of protein and 32.5g of fiber, including the crazy delicious streusel and frosting toppings.

A few notes before you bake

Use the listed baking mix. This recipe was made with Carbquik. Swapping in flour or another baking mix may change the texture and require different ingredient amounts. You could opt for a self-rising flour if you don’t want to configure leavening amounts, but the amount of greek yogurt and apple pie filling will likely need to change.

Sweeteners vary. Use a stevia sweetener intended for spooning or baking. Concentrated stevia is much stronger, so follow its substitution directions rather than adding a full tablespoon.

Protein powders vary, too. The frosting uses a blend of casein and whey. If yours is too thick to drizzle, stir in a few drops of water at a time until it reaches the consistency you want.

Air fryer option

Use the same 350°F temperature and check for doneness early, as air fryers can cook faster. Arrange the four mounds with space between them. If using parchment, secure it beneath the batter and follow your appliance’s directions.
